Rainy Day Baking

When the weather is telling you to stay inside and stay warm,it means it's a perfect day for baking! And Val and I have been getting our bake on. Last week there was the apple crisp which I have a picture of finally:


And the delicious Nutella french toast:

This week we continued with gusto and concocted a delicious carrot cake, chewy no-bake cookies and a cake-in-a-mug for a little extra pizzazz.

I found this recipe to make cake-in-a-mug. I thought it was one of the most ingenious things I've seen made, but then I was informed that it's pretty much just a cupcake, which I guess it is, but it's so much cooler when you say it's cake in a mug and that you made it in a microwave. I still think it's genius and it was gooey and chocolaty, and everything you want out of a cake. Success? I think yes :D 


And our little fall baking party had us celebrating Autumn and Halloween the best we could. With cinnamon, carrots and a Halloween playlist rocking in the background. I started the carrot cake while Val started the cookies, I think I shred about a gazillion carrots. In reality it was only three, but it felt like a lot.

Then with the cake in the oven and our cookie mixture ready, we whipped out some fantastic cookie drops if I say so myself. 



It's gooey, it's chocolate, it's loaded with sugar and butter. What more could one ask for?

We both agreed it was a complete success


Both the cookies and cake turned out beautifully and we agree that baking definitely needs to happen in our apartment more often. But maybe not too often...
